Sleepy Teddy Pumpkin Pies

Pie Ingredients

  • 2 sheets puff pastry, thawed
  • 12 jumbo marshmallows
  • 1 box cinnamon flavored Teddy Grahams
  • 1 egg
  • 1 tbsp cinnamon sugar
  • pumpkin filling (see below)

Pumpkin Filling Ingredients

  • 3/4 cup pumpkin puree
  • 1 tbsp flour
  • 1 egg
  • 1 tbsp grated ginger
  • 2 tbsp brown sugar
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp salt

Directions

  1. Preheat oven to 425°F.
  2. In a medium saucepan, whisk together all filling ingredients and simmer for 10 minutes, stirring frequently.
  3. Allow the filling to cool for 10-15 min before assembling the pasties.
  4. Cut each puff pastry sheet into six identical squares (12 total squares).
  5. Divide the filling into 12 equal portions and scoop into the center of each square.
  6. Slice each marshmallow in half longways to create two pillows for each square. Place the marshmallow slices sticky-side down at the top of each square to start assembling the teddy's bed.
  7. Place 1-2 teddies on top of the filling with their heads resting on the marshmallow pillows.
  8. Lift the bottom half of each pastry square and fold it over the teddies to tuck them into bed. Use a fork to press the seams together.   9. Whisk the egg in a small bowl. Brush the egg wash over each pasty. To prevent the pasties from bursting, score the blankets lightly with a knife to create a small opening.
  10. Sprinkle each pasty with an even coating of cinnamon sugar and bake for 12-13 minutes.
  11. Transfer the pasties to a wire rack to cool for 5-10 minutes. Serve immediately or freeze.**
