Chicken & Broccoli Stir Fry

Main Ingredients

  • 1 lbs chicken breast, sliced into bite sized pieces
  • 1-2 broccoli crowns (depending on size), cut into bite sized pieces
  • 1 large carrot, peeled and thinly sliced into rounds
  • 2-3 cups jasmine rice

Sauce Ingredients

  • 1 inch ginger root, grated
  • 3 cloves garlic, grated
  • 1/2 cup hot water
  • 6 tbsp soy sauce
  • 3 tbsp light brown sugar
  • 1 1/2 tbsp corn starche
  • 1 tbsp sesame oil
  • 1/4 tsp black pepper

Directions

  1. Cook rice in rice cooker so it's ready when the stir fry is done.
  2. Combine all stir fry sauce ingredients in a liquid measuring cup (the kind with a spout). Stir well until sugar is dissolved.
  3. Heat a large skillet or wok over medium/high heat and add 1 tbsp cooking oil.
  4. Add in broccoli and carrots, give them a stir and partially cover with lid. Reduce heat to medium.
  5. Cook 3-4 min, stirring occasionally. Remove broccoli once bright green and set aside.
  6. Increase pan to high heat and add another 1 tbsp cooking oil.
  7. Add chicken pieces to the pan in a single layer and saute 2-3 min per side until just cooked through.
  8. Give sauce a quick stir and pour over the chicken. Reduce heat to low and simmer 3-4 min. Sauce will thicken.
  9. Add the vegetables back to the pan stir to combine. Stir in 1-2 tbsp water to thin sauce if desired.
  10. Serve immediately over a bowl of rice.
